Well search no further. I found a baked oatmeal recipe on Pinterest that you bake the night before and you're left with breakfast for the week. And get this, it's tasty!
I followed this recipe, but tweaked it just a bit. I omitted the chocolate chips, used regular oats (not gluten-free), and used blueberries instead of raspberries.
It was definitely a nice treat come morning. I microwaved it for a minute and sat down (yes, sat down!) to enjoy all of it's baked goodness.
