B.J. and I hosted a birthday dinner for my mom this past weekend. I decided on a Mexican theme, so I served baked tacos, spanish rice, refriend beans and a black bean, avocado, tomato salad. (And margaritas, of course!) I lined the table with brown gift wrap and used crayon to write each person's name where they would sit. It also proved to be the perfect canvas for the kids to draw and write on when they were finished eating.
Down the center of the table sat chips, in colorful nesting baskets I got a couple years ago at Crate and Barrel, and dip, in margarita glasses we got as a wedding gift.
One of the dips I made was a chunky salsa that is so easy and delicious. I got the recipe a few years ago from my mom and I'm so glad I did.
Drain and rinse 1 can of black-eyed peas and put them in a bowl with 1 can of Rotel tomatos.
Add the juice of 1 lime and a couple tablespoons or so of chopped green onion.
Mix together and enjoy!
